Lazy Keto – No-Roux Cheese Sauce

No flour. No cream. Just fridge + microwave.


🛒 Ingredients (1–2 serves)

  • 1/2 cup cottage cheese
  • 1/4 cup Greek yogurt
  • 1/2–1 cup grated cheese (cheddar / tasty / mozzarella)
  • 1 tbsp milk powder
  • 1 tbsp cream cheese (optional but recommended)
  • Salt + pepper

  • Microwave-safe bowl
  • Spoon or spatula
  • Fork, masher, or blender (recommended)
  • Measuring cups / spoons
  • Optional: stick blender for smoother texture

  • Do not overheat → prevents splitting
  • Stir frequently → keeps sauce smooth
  • Keep yogurt moderate → too much = watery
  • Blending improves texture significantly
  1. Smooth the cottage cheese
    Mash or blend until mostly smooth
  2. Combine all ingredients
    Mix in a microwave-safe bowl
  3. Microwave in short bursts
    • 30–45 seconds at a time
    • Stir between each round
    • Stop once melted and combined
  4. Use immediately
    Pour over vegetables, meat, or fish

🔄 Variations

  • Garlic → add garlic powder
  • Smoky → add paprika
  • Extra thick → add more cheese
  • Extra smooth → include cream cheese

  • Fridge: 2–3 days
