Lazy Keto – Breakfast Bread

🍞 2-Minute Cup + Toast

A fast, no-fuss brekkie bread you can mix in one mug, microwave, slice, and toast.
Comfort food → keto style.

🥣 Ingredients (1 serve)

  • Almond flour — 4 tbsp (28g)
  • Baking powder — ½ tsp
  • Egg — 1
  • Butter — 1 tbsp (14g), melted (or olive oil)
  • Sweetener — 1 tbsp (optional, for sweet version)
  • Cinnamon — ½ tsp (optional)
  • Salt — pinch

Optional add-ins:

  • Raisins — 1 tsp (optional, keep small)
  • Sugar-free choc chips — 1 tbsp (optional)

⚡ Instructions

  1. Melt butter in a microwave-safe mug.
  2. Add almond flour, baking powder, salt (and cinnamon/sweetener if using).
  3. Add egg → mix until smooth.
  4. Fold in raisins or choc chips (optional).
  5. Microwave 90 seconds.
  6. Rest 1–2 minutes (lets it firm up).
  7. Tip out, slice in half horizontally, and toast.

🧈 Serve

  • Butter while hot
  • Optional: sprinkle cinnamon + sweetener on top

🔥 Why this works

  • Toasting = crispy edges, soft centre
  • Removes eggy texture
  • Turns it into a proper toast substitute

🧠 Lazy upgrades

  • Add 1 tbsp cream cheese → softer, more “bread-like”
  • Make 2 at once → thicker slices for sandwiches
  • Skip sweetener → go savoury (add cheese instead)

⚖️ Notes

  • Base is low carb
  • Raisins add a small carb bump → keep minimal
  • Choc chips (sugar-free) are the safer option

Note: This is a practical keto-style recipe for convenience and enjoyment, not medical advice.
